Raised by Wolves Old School Cinsaut Cabernet

R243.00 / bottle

Having enjoyed many old South African Cabernet Sauvignons from the 1960’s and 1970’s I was enthralled to discover that many of these old gems contained far greater percentages of Cinsaut than Cabernet Sauvignon, reflecting the actual plantings of both varieties at the time. Using possibly the oldest producing Cinsaut vineyard in Stellenbosch (planted in 1965) and Bonniemile Cabernet planted in the 1980’s I have attempted to pay homage to this uniquely South African story.

2/3 Rustenhof Cinsaut

1/3 Bonniemile Cabernet Sauvignon

Alcohol: 12,77%

Residual Sugar: 1,4g/L

Volatile Acidity: 0,69g/L

pH: 3,69

Total Acid: 4,9g/L

SO2: 17/69ppm

W.O, Stellenbosch

Out of stock

Vinification of both varieties was carried out in separate concrete ‘kuipe’ before transferring to barrels for 18 months maturation.

Bottled: 19 September 2017

Produced: 1735 x 750ml

Growers: Rustenhof: Pieter Bredell

Bonniemile: Deon Joubert

Given the name, you’d be correct for assuming this is the one to pair with an old school braai. Bring the lamb tjoppies, that 20-day aged rib-eye steak and those perfectly marinated chicken kebabs. Hell, throw in some oven roasted butternut if you dare. This is the wine to silence the fireside critics. No tjoppie too charred, no steak too bloody rare. And butternut….what a revelation. Old School. Pure drinking pleasure.
